Which gear, which BIKE?

Thoughts on the right gear for a one-year journey that include the big differences in terrain, clima-zones and altitudes:

Choosing the equipment i considered these 4 main points: (highest priority first)
-1- durability/quality
-2- weight
-3- simplicity/for repairs
-4- price
IMPORTANT: WHICH BIKE?
As i will do a lot of climbing with a fully packed bike, weight will be an important issue.
The Bike itselfe won't be the parte where i can save the most weight also considering the price per weight. The arrangement of the other equipment will make the biggest difference.
A standart touring bike never was an option for me as I am a pure roadbiker and adapted to the riding position and geometry of a roadbike.
The consequence was to look for a good and firm Gavel-BIKE that has the option for mounting a rack, as i will need some smaller panniers. (never liked lowriders)
The rest of the packing will be done with a full set of bikepacking bags.
Good bike options I consider:
1 - Bombtrack Hook EXT
pro: tire clearence/lots of mounts con:weight

2- Cannondale Topstone APEX 1x11
pro: tire clearence/ toptube mount con: high price

3- Focus Mares 6.9 APEX 1x11
pro: big frametriangle con: high price/heavy

4- Canyon GRAIL AL 7.0sl RIVAL 1x11
pro: price/ con: smaller frametriangle

5- Rose PROGravel APEX 1x11
pro: price/weight/big frametriangle con: -

Wheels i defenetly will do custom ones. Hubs / Dynamo hub and the whole build will have to be realy durable, and this depends much on an experienced wheel builder.
NOTE: This planning-state is not complete already and will chagene due to the planning process.
